Creamy Chocolate (Protein) Overnight Oats

Is there really anything better, than starting off your day with a big bowl full of warm, creamy oats? I don’t think so. Oatmeal the perfect comfort food, which has so many different variations to it and also packs in a decent amount of complex carbs, fibre and protein, making it a delicious and nourishing breakfast. Cooking it on the stove-top is by far my favourite way to have oatmeal, but admittedly, that does take a little time. But what do you do when you’re short on time or it’s just too hot for oats? In that case, I highly recommend you try overnight oats. As the name already gives away, you make them the night before and then leave them in the fridge, meaning your breakfast is basically ready as soon as you wake up and you still get to have a creamy and delicious bowl of oats, which you could even warm up in the microwave.

Most overnight oats are made with oats and some kind of milk as the base ingredients, combined in a 1:1 ratio. However, I find that the trick to getting them extra creamy is to use yoghurt (I use soy) and only a little (plantbased) milk to get them to the consistency you prefer. I like to add in half a banana for sweetness, especially as this version uses cacao powder, which on itself is relatively bitter. You can always omit the cacao powder and use neutral/vanilla protein instead of the chocolate one, but let’s be real – who doesn’t want to have chocolate for breakfast?! 😉

Without further ado, let’s get into the recipe:

Ingredients:

  • 50g oats (I prefer steel-cut)
  • 1/2 banana, mashed
  • 1 tsp chia seeds
  • 100g soy yoghurt
  • 90ml (3/8 cup) almond milk
  • 1/2 scoop (around 20g) chocolate protein powder
  • 1 TBSP cacao powder
  • pinch of cinnamon (or as much as you like)
  • optional: 1 tsp maca powder, pinch of salt (to enhance the flavours)

Method:

Simply mix all the ingredients in a bowl, then cover the bowl, place it in the fridge overnight and enjoy the next morning either as it is or heated in the microwave, and/or topped with fruit/nut butter/etc. !

Tip: Make this in an almost empty nut butter jar – it’s heavenly!

I made them in an almost empty jar of homemade cashew butter – kind of looks like a milk chocolate swirl, doesn’t it?

I completely relate to your love for oatmeal. It’s the best! I’m willing to sacrifice the extra time to make them on the stovetop, because they are ten times better cooked that way! Also, I truly adore making overnight oats and baking them nowadays! SO yummy! This recipe sounds classically splendid. Who doesn’t want a great dose of chocolate in the morning! You’re so lucky to have enjoyed it in a nearly empty cashew butter jar too!

I usually sacrifice the extra time too, as stove-top oats are just soo much better than microwaved oats! Haven’t had overnight oats for a while and completely forgot just HOW good they really are…especially in a nut butter jar, it really takes it to the next level! Thank you Cassie! They honestly have to be the best overnight oats I’ve ever made – really recommend you try them 😉
